Ingredients:
1 can black beans (drained)
1 can/package sweet corn (we used our CSA corn this time)
1 cup salsa
2 cups Mexican Cheese blend
Tortillas
Preperation:
- In a medium saucepan add the beans, corn and salsa together. Mix well and heat until beans and corn are heated all the way through
- In a skillet add a little bit of butter and place one tortilla on top. Sprinkle with whatever amount of cheese you want, then spoon the bean/corn mixture onto the tortilla. Add a little bit of extra cheese on top and add the second tortilla.
- Once the bottom tortilla is cooked flip the whole thing over and cook the other tortilla. When done, you can put it immediately on a plate and serve!
