Black Bean and Corn Quesadilla

This is a recipe I've used for quite some time now as it has a lot of flavor and protein, which can sometimes be hard to come by with Vegetarian foods. This is definitely not the healthiest thing to make, but it fills you up really well and makes you happy. I'm not even sure where I got this recipe anymore so I can't really give credit to anyone.

Ingredients:

1 can black beans (drained)
1 can/package sweet corn (we used our CSA corn this time)
1 cup salsa
2 cups Mexican Cheese blend
Tortillas

Preperation:

  1. In a medium saucepan add the beans, corn and salsa together. Mix well and heat until beans and corn are heated all the way through
  2. In a skillet add a little bit of butter and place one tortilla on top. Sprinkle with whatever amount of cheese you want, then spoon the bean/corn mixture onto the tortilla. Add a little bit of extra cheese on top and add the second tortilla.
  3. Once the bottom tortilla is cooked flip the whole thing over and cook the other tortilla. When done, you can put it immediately on a plate and serve!

Nutrition - 1 serving (makes about 4 servings based on who much filling you use)

Calories - 513, Fat - 17g, Sodium - 550mg, Carbs - 70g, Fiber - 14g, Protein - 21g
